CROCKPOT ITALIAN CHICKEN SAUSAGE AND BEAN SOUP

A HEALTHY AND FILLING MEAL THAT TAKES JUST A FEW MINUTES TO PREPARE THEN THE CROCKPOT DOES ALL OF THE WORK! GREAT RECIPE FOR THOSE THAT ARE BUSY AND DON'T HAVE THE EXTRA TIME TO SPEND IT IN THE KITCHEN.

Ingredients

  • 1 PACKAGE 16 BEAN SOUP MIX DRIED BEANS
  • 3 LEAVES BAY
  • 1 TABLESPOON OREGANO CRUSHED
  • 2 CANS NO- FAT CHICKEN BROTH
  • 3 STALKS CELERY CHOPPED
  • 3 CARROTS DICED
  • 1 LARGE ONION CHOPPED
  • 3 CLOVES GARLIC ROUGH CHOPPED
  • 1 PACKAGE CHICKEN ITALIAN SAUSAGE SLICED
  • 2 CANS STEWED OR DICED TOMATOES
  • 3-6 CUPS WATER ENOUGH TO COVER BY 1-2 INCHES IN CROCKPOT

Instructions

  1.  Combine first 5 ingredients (liquid should cover mixture by 1"-2") in Crock Pot Cook on high for 2 hours Add remaining ingredients and shift cooker to low and cook for additional 3 hours For more zing, add cayenne or crushed red pepper when adding second set of ingredients. Serve as complete meal or over brown rice. Freezes well.
