Southern Style Vegetable Soup

 

1/2 pound of ground turkey or ground beef

8 cups of water

1/3 cup of barley

one- medium onion chopped

1 cup of sliced carrots

1 cup of chopped celery and leaves

2-large cans of tomatoes

1 cup of whole kernel corn,canned or frozen

1 cup of green peas,canned or frozen

1 tablespoon of salt

1/4 teaspoon of Rosemary

1/4 teaspoon of margarine

1/4 teaspoon of time

1/2 of bay leaf crushed

4- peppercorns

1-beef bullion cube

 

Instructions

  1. Brown meat in large pot and chip into very small pieces .Add Water and barley and simmer for 30 minutes .Add onion, carrots, celery ,Tomatoes ,corn, peas ,salt Rosemary, marjoram ,and Thyme .Tie bay leaf and peppercorns in cheese cloth bag add to soup.Cook for 25 to 35 minutes or until vegetables are done. Remove cheese cloth bag before serving.

     serves 10 to 12
